Shen Nung is believed to have taught the ancient Chinese their practices of agriculture, as well as the use of herbal drugs, which became the foundation of traditional Chinese medicine. • Shen Nung is often depicted dressed in traditional garb made of leaves (G) with two horns on his head (A). The horns are representative of the water buffalos or ox that were used in many of his agricultural developments such as the use of bovine animals to pull plows, etc. • Shen Nung is credited for inventing the ‘Slash and Burn’ agricultural technique, thus earning the title of the “God of Burning Wind” (B). • According to many legends, Shen Nung had a see-through abdomen (C) that allowed him to test and see the effects of various herbs on his internal organs. He would then drink antidotal tea (D) to prevent himself from suffering any complications or side-effects from his medicines. • Tea (D) is allegedly one of Shen Nung’s great discoveries; it proved to be the antidote for almost 70 varieties of poisons. He discovered tea by accident when the tea leaves (E) from twigs he was burning rose up on a column of hot air and landed in a cauldron of boiling water. Being a keen herbalist, he tasted the resulting brew, thus giving rise to the origin of tea. Shen Nung tasted hundreds of herbs in order to determine their medicinal value. • According to some versions of his story, Shen Nung eventually died as a result of his investigations of the properties of plants. Purists prefer their Lamingtons in this simple form, although a variety with a layer of cream and/or strawberry jam in the center has been growing in popularity for some time. • The popular origin story claims a maidservant of Lord Lamington, the governor of Queensland, Australia, accidentally dropped a sponge into some melted chocolate in 1901. Rather than waste the cake, Lord Lamington suggested she cover it in coconut and the lamington was born. However, New Zealand scholars have recently claimed Australia only copied and renamed a local treat. Unearthed records have found Lord Lamington visited Wellington in the 1890s and apparently enjoyed a suspiciously lamington-like sweet named after the city. • With around 10 sheep for every person, sheep farming has become a symbol of New Zealand as a nation. This abundance of sheep has led to lamb meat and wool to be two of New Zealand’s highest valued exports. • The majority of sheep found in New Zealand are Romney – an English breed that is able to tolerate local weather conditions, as well as producing the quality meat and wool the country is globally renowned for. Merino, a Spanish breed better known for its desirable wool, was also brought to the country in large numbers. • Lamb is considered an essential part of the quintessential New Zealand Sunday roast – a long-held family tradition that diligently survived until the late 20th century. Driving the lawn mower has always been a good bit of pocket money, and a step towards getting a car-driving licence for many. Mowing the lawns is engrained in NZ culture as most families are lucky enough to have a property with a decent patch of grass on it. • The Moa is a large, extinct, ostrich-like flightless bird, native to New Zealand. Although the larger moas probably had become extinct by the end of the 17th century, a few smaller species may have survived into the 19th century. • According to Maori tradition, moas were swift runners that, when cornered, defended themselves by kicking. Early Polynesian peoples hunted moas for food; they made spear points, cutting tools, hooks, and ornaments from their bones, and water carriers from their eggs. • Moas were chiefly browsers and grazers. Although a wide range of colours and patterns are available, the traditional swanny pattern is a dark tartan with thick criss-crossing stripes of either blue or red over a black base. • The iconic garment was designed by William Broome (1873–1942) and was registered as a trademark on 23 December 1913. • According to the Swanndri’s corporate history, Broome’s design began after he was frustrated by the persistently rainy New Zealand weather. Fish and chips, meat pies, sausage sizzles, bacon and egg pies are all commonly consumed with a side of tomato sauce, making tomato sauce an essential component of New Zealand’s food identity. • The first tomato seed came with the earliest colonists from Britain as one of the many garden species to be tried in the soil of their new home where the newcomers must surely have made tomato sauce. Fast forward a couple centuries and tomatoes had become a staple in the New Zealand diet. Tomato sauce started being made by numerous enterprises in the fruit and vegetable growing areas. ‘part’ or ‘mixed,’ commonly used to describe people of mixed ethnic heritage. In my work I use this idea of ‘mixing parts to create a unique whole’ to tell historical and cultural stories while bringing contemporary topics to light. My creatures make visible the processes of history, technology, progress and evolution, sexual and natural selection, along with genetic engineering, the effects of globalization and the interrelationship of cultures in contemporary society. The Honu, or Hawaiian Green Sea Turtle, symbolizes good luck, endurance and long life in Hawaiian culture. Hawaiian legends state that these turtles were the guides for the first voyagers to Hawai‘i and many other pacific islands, including New Zealand (Aotearoa). The Hokulea is a symbol of the ancient Polynesian people and their outstanding journey to the pacific islands. Spam became a popular food in Hawai‘i after WWII. It was a main course military food for the troops during the war. The large military presence in Hawai‘i led to spam becoming a popular local food. As a result, local Japanese combined a slice of grilled spam into their traditional o-musubi - a block of rice. Often there is a layer of furikake dried seaweed seasoning) and wrapped together with a sheet of nori (dried seaweed) - to create spam musubi. Shave ice is made by literally shaving small bits of ice from a large block. By shaving the ice from the block — as opposed to simply crushing it, like in other places outside of the Islands — the syrups used to flavor the shave ice are better absorbed by the ice. The result is a fluffy, snowflake-like, melt-in-your-mouth, texture that’s unrivaled in its deliciousness. The process of shaving the ice can be traced back to Japanese plantation workers who immigrated to the Islands in the 19th century. In Japan, shave ice is referred to as kakigori and dates back nearly 1,000 years to the Heian Period. When the plantation workers arrived in Hawai‘i, they brought their taste for the delectable treat with them. Shave ice was originally sold only on Sundays, the sole day of the week plantation workers didn’t have to work the fields. However, by the 1920s, shops selling the snowy treat had popped up all over the state. Along with the technique of shaving the ice, the flavors and toppings used for our shave ice in Hawai‘i is reflective of the many cultures that have forged the collective identity of the Islands. The most iconic flavor associated with the Islands is rainbow shave ice; a combo of strawberry (red coloring), pineapple (yellow coloring) and vanilla (blue coloring). Azuki beans and a scoop of ice cream are also commonly found at the base of this slushy dish in Hawai‘i. It is a soup dish of soft wheat egg noodles served in hot dashi garnished with green onions. Kamaboko, char siu, a boiled egg and nori may be added, among other additions. Saimin is recognized as a traditional state dish in Hawai‘i, taking into consideration the various historic and cultural significances of its creation. The dish is composed of elements taken from each of the original sugarcane and pineapple plantation laborer ethnicities of the early 20th century: Chinese, Filipino, Japanese, Korean, Hawaiian, Portuguese. As plantation laborers returned from the fields communal meals were informally prepared. It is believed that in some occasions a Filipino family may have had extra green onions growing in their yard, the Portuguese some sausage, the Hawaiian a couple extra eggs, and the Korean some cabbage left over from making kimchi. At this point they would all throw their ingredients into the pot to be shared. This dish often eaten with chopsticks out of deep bowls with sloped sides. This dish has many variations, but the original Loco Moco was reportedly created at a restaurant in the town of Hilo, on the island of Hawai‘i in 1949. The dish came in response to requests from a group of teenagers seeking a dish that was quick, inexpensive and filling, yet still easy to serve. The response was a bowl of rice and a hamburger patty, topped with brown gravy. The teenagers named the dish after one of their sports club members named Loco; Moco was added simply because it rhymed. A musubi consists of a handful of cooked rice shaped into a triangle with some seasonings, fillings and/or toppings. Popular fillings in Hawai‘i include: ume, kombu and salmon. Popular seasonings include: shiso and furikake. Musubi are believed to have originated in Japan (where they are called o-musubi or o-nigiri). They were first used for religious purposes and later as a portable food to carry on the battlefield for soldiers. With the increase in domestic travel, compulsory education and the work force they became popular lunches for travelers, students and workers. A take on the traditional Chinese bao, ‘manapua’ is the born-in-Hawai‘i name for the popular snack. There are two known antecedents of the word: a shortened form of the Hawaiian phrase mea ono puaa, which translates as ‘pork pastry,’ or mauna puaa, which translates to ‘mountain of pork.’ The Chinese are believed to have brought bao to Hawai‘i in the mid to late 19th century during their largest wave of immigration. After finishing contracted terms as sugar plantation laborers, many Chinese opened businesses and restaurants. Food peddlers would walk neighborhoods selling snacks, including manapua, from large aluminum cans hung with cords at the ends of poles hoisted on their shoulders. Affectionately dubbed ‘manapua men’ by locals, they eventually took to selling the popular filled buns and other Chinese dim sum goodies in populated areas such as beaches and business districts, using vans and food trucks. The name ‘malasadas’ means ‘poorly cooked,’ a reference to the almost crisp, sugary exterior contasted by a soft, doughy interior. The traditional Portuguese malasadas do not contain holes or any type of filling, however, the malasadas found in Hawai‘i have a variety of options. The most popular malasadas are sold plain with a choice of sugar coating including: granulated sugar, cinnamon sugar and li hing sugar. Popular fillings include: custard, haupia and dobash. Malasadas were rarely offered in Hawai‘i bakeries until Leonard Rego (the grandson of Portugese immigrants) opened Leonard’s Bakery on O‘ahu in 1953. Following his Grandmother’s recipe, Rego began selling malasadas on Shrove Tuesday, the day before Lent: a tradition in Portuguese culture. They were a hit and Leonard’s is now one of Hawai‘i’s most well known malasada establishments. In a similar fashion to the Polynesians centuries before, fishermen were seasoning the cut-offs from their catch to serve as a snack. Traditional poke seasonings have been heavily influenced by Japanese and other Asian cuisines. These include soy sauce, green onions, and sesame oil. From 2012 poke has become increasingly popular in restaurants, not only in Hawai‘i but around the world, creating traditional as well as unique, modern versions of the dish. These variations can include avocado, ponzu sauce, teriyaki sauce, mushrooms, crispy onions, pickled jalapeño, sriracha sauce, cilantro, pineapple or cucumber. The contemporary poke restaurants are mainly fast, casual style places where the dish is fully customizable from the base to the marinade on the fish. Therefore, the soldiers ended up being fed a lot of spam, which is cheap and non-perishable. When the plantation era ended, these carb-loaded lunches remained, thanks in part to early entrepreneurs who had launched lunch wagons in the 1930s, along with diners and drive-ins that emerged after World War II. Consumed regularly by everyone from surfers to businessmen to even former President Barack Obama when he vacationed on O‘ahu, the plate lunch is simple in form but varied in its elements. Its basis: two scoops of sticky white rice and a side of macaroni salad that’s laden with mayo. The protein portion reflects the mix of cultures and ethnicities in the Islands: kalbi and meat jun (Korean), chicken katsu and teriyaki beef (Japanese), pork guisantes and chicken adobo (Filipino), lau lau1 and kalua pig2 (Hawaiian – featured in this illustration). Raw salmon is cured with salt and diced up along with tomatoes, onions, and normally some chili peppers. The dish is now part of most traditional Hawaiian meals and makes a great addition to poi. 4 Poi is a staple and traditional filler starch dish in Hawaiian cuisine. It is a thick paste made from taro root (similar to a yam or potato but with a starchy-er flavor) that is either steamed or baked and pounded. Water is added to the mixture while pounding, to create a very sticky pudding like consistency. The ukulele is derived from the Portuguese instrument, the ‘machete’ (machete de braga) which is a member of the guitar family. The machete was brought to Hawai‘i by Portuguese immigrants, who moved to the Islands to work in the sugar cane fields in the late 1800’s. Manuel Nunes, Augusto Dias and Jose do Espirito Santo, who arrived in Hawai‘i in 1879 from the Portuguese Islands of Madeira are believed to have been the first makers of the Hawaiian ‘ukulele’. After its arrival in Hawai‘i, the ukulele was quickly adopted into Hawaiian culture. King David Kalakaua was very fond of the small instrument and promoted the ukulele as a Hawaiian instrument. He ensured that the ukulele was used at formal royal functions, to play traditional Hawaiian music, and to accompany hula which is acknowledged as a key factor that led to the instrument becoming so popular in Hawai‘i. Although the ukulele is still associated with traditional Hawaiian music and culture, the development of different types of ukulele has led to the popularization of the instrument in many different musical settings. The first term used for the traditional Y-shaped thong sandal comes from the Japanese word zori (which is also where the manufacturer of the popular rubber slipper brand, Locals Slippahs - Zori Zori - gets its name). The traditional zori was a woven-type of sandal that was used as beach footwear in Japan and the wider South Pacific in order to maximize comfort while minimizing clean-up when walking through the sand. It is debated that Elmer Scott, a transplanted New Englander was the first maker of rubber slippers in Hawai‘i. Scott specialized in making rubber boots for plantation workers during the 1930s. However, with the outset of World War II he switched to making sandals and open toed shoes for submariners due to a shortage of materials. They became popular, especially after the war and his business shifted to focus on making rubber slippers. In Hawai‘i today, the rubber slipper is found worn not only on the beach, but in grocery stores, casual restaurants and during many other everyday activities. As an iconic symbol, the rubber slipper shows up everywhere - from paintings and tattoo designs to metal pendants and earrings. Not only that, the slipper is incredibly useful; Hawai‘i locals use the it for kickball bases, stabilizing rocky tables, swatting cockroaches and even for bodysurfing. It was his son, Kōichirō Miyamoto, who sewed and sold the first Aloha shirt using Japanese kimono fabrics. The modern Aloha shirt was devised in the early 1930s by Chinese merchant Ellery Chun of King-Smith Clothiers and Dry Goods, a store in Waikiki. The first advertisement in The Honolulu Advertiser for Chun’s Aloha shirt was published on June 28, 1935. Local residents, especially surfers, and tourists descended on Chun’s store and bought every shirt he had. Within years, major designer labels sprang up all over Hawai‘i and began manufacturing and selling Aloha shirts en masse. What began as a souvenir product for tourists, providing lasting memories of their island visits is now a very common clothing item worn in Hawai‘i. In 1967 state legislators began wearing Aloha shirts on fridays as an initiative to promote products made by local manufacturers and Aloha Friday was born. This spread to the wider business community which gave way to the acceptance of more a casual style of dressing in the workplace, and later, in everyday life.. The Aloha shirt now provides men with a comfortable, lightweight, yet stylish alternative to a suit and tie; more suitable for the warm island climate. There are a few ways to tell if you’re looking at an authentic, high-quality Aloha shirt. If the pockets match the pattern, that’s a good sign, but it’s not everything. I was tasked with imagining Hawaii’s energy future centered around the process of hydrogen electroysis; a process where electricity splits water into hydrogen and oxygen to use as fuel. Imagined on the island of Lanai, a clean energy production facility operates while hydrogen powered air-freighters deliver goods and produce with the help of sky stevedores and their lighter-than-air
